This simple recipe, with only a few ingredients, produces a deliciously tender fish, swimming in tangy lemon, punchy garlic and a little kick of pepper. It’s quick to cook and while it’s in the oven you can make a big salad to go on the side for a great weeknight dinner.

Preheat oven to 400°F.

Prepare the tilapia

Sprinkle the fillets of tilapia with the salt and pepper. Lay them on a lightly oiled baking.
