1 (4-5 oz) Salmon
2 Grapefruit supremed , juice reserved
1 Avocado large, sliced
1 small bunch Cilantro chopped, plus more for garnish
2 tsp Olive oil extra-virgin , plus more for baking salmon
â…› tsp Salt
2 tbsp Chives chopped, plus more for garnish
from ½ Pomegranate seeds plus more for garnish
4 leaves Red cabbage

These Purple Cabbage Cups with Flaked Salmon & Avocado are the perfect lunchtime meal! Cooked salmon, simply seasoned with olive oil, some salt and pepper and baked in the oven for a few minutes then mixed with grapefruit, avocado slices, chopped cilantro, chives and finally pomegranate seeds, all served inside gorgeous, purple cabbage cups.

Steps to make Purple Cabbage Cups with Salmon & Avocado

Preheat oven and prepare baking sheet

Preheat the oven to 350 °F and line a baking sheet with parchment paper.

Season salmon

Transfer the salmon fillet to the lined baking sheet and season with salt, pepper and a drizzle of olive oil.

Cook salmon

Cook the salmon in the preheated oven for about 10 minutes until the middle is just cooked.

Flake salmon

Allow salmon to cool for a few minutes before using a fork to gently flake apart.

Prepare salad

In a medium bowl, add 1 chopped grapefruit, 1 sliced avocado, a small bunch of chopped cilantro, 2 tablespoons of chopped chives, a few teaspoons of grapefruit juice, 2 tablespoons of olive oil and â…› teaspoon of salt and carefully toss to well combine.

Add salmon

Gently mix in the flaked salmon.

Prepare cabbage cups

Carefully peel 4 cabbage leaves for serving.

Serve

Carefully portion spoonfuls of salad into each cabbage cup and garnish with a few sprinkles of cilantro leaves, chives and pomegranate seeds, to serve.
