3 tbsp Red wine vinegar
2 tbsp Oregano chopped, fresh
2 tsp Dijon mustard
¼ tsp Crushed red pepper
1 Shallots small , chopped
1 clove Garlic grated
16 oz Zucchini spiralized noodles
3 cups Cherry tomatoes halved
⅓ cup Black olives or Kalamata olives, pitted
¾ cup Parmesan cheese shaved , divided

This Zucchini Noodle “Pasta” Salad is a super healthy take on pasta salad. Featuring classic Mediterranean flavors, but way less carbs than traditional pasta contains. This salad is one of my favorite recipes to make on a hot day.  

Start by making a dressing in a salad bowl using oil, vinegar, oregano, mustard, crushed red pepper, shallot and garlic. Add zucchini noodles, tomatoes, olives and Parmesan to the dressing and toss gently to coat. To serve, divide the salad evenly into 4 bowls. Garnish Parmesan shavings. Enjoy!

Steps to make Zucchini Noodle “Pasta” Salad

Make dressing

Place 5 tablespoons of extra virgin olive oil, 3 tablespoons of red wine vinegar, 2 tablespoons of chopped fresh oregano, 2 teaspoons of Dijon mustard, ¼ teaspoon crushed red pepper, 1 small chopped shallot and 1 grated clove of garlic in a large bowl and whisk until combined.

Add noodles, tomatoes, olives and Parmesan

Add 16 ounces of spiralized zucchini noodles, 3 cups of halved cherry tomatoes, ⅓ cup of pitted Kalamata olives and half of the shaved Parmesan cheese to the bowl and toss the ingredients gently to coat.

Serve

To serve, divide the salad evenly among 4 individual bowls and sprinkle with the remaining Parmesan cheese to garnish.
