Zucchini Noodle “Pasta” Salad
This Zucchini Noodle “Pasta” Salad is a super healthy take on pasta salad. Featuring classic Mediterranean flavors, but way less carbs than traditional pasta contains. This salad is one of my favorite recipes to make on a hot day. Â
Start by making a dressing in a salad bowl using oil, vinegar, oregano, mustard, crushed red pepper, shallot and garlic. Add zucchini noodles, tomatoes, olives and Parmesan to the dressing and toss gently to coat. To serve, divide the salad evenly into 4 bowls. Garnish Parmesan shavings. Enjoy!
