1 Sweet potatoes peeled and cut in cubes
3 Carrots peeled and roughly chopped
1 Parsnip peeled and roughly chopped
1 Onion peeled and cut in quarters
3 cloves Garlic crushed
1 tsp Turmeric powder
1 tsp Cumin powder
1 pinch of Chili powder
¼ tsp Sea salt
2 cups Vegetable broth low sodium , warm
½ inch piece of Ginger peeled and grated
1 tsp Coconut oil
For the garnish:
fresh Parsley to taste
1 tsp Coconut milk

This Vegan Sweet Potato Detox Soup is so healthy. It’s full of vitamin A and fiber and is bursting with flavor. I love colorful food, and this soup definitely brings the color! The soup mainly gets its bright orange color from sweet potato and turmeric powder and also from the red lentils. 

To make this, I roast the vegetables seasoned with salt, chili, turmeric, and cumin. Once they are tender, I transfer them to a blender with the warm vegetable broth, ginger and cooked red lentils. I blend the mixture to make a creamy bright orange soup and serve topped with coconut milk and parsley.

Heat the oven and prepare a baking sheet

Preheat the oven to 329 °F and line a baking sheet with baking paper.

Prepare the vegetables for cooking

Place the sweet potato, carrots, parsnip, onion, and garlic on the baking sheet. Season with salt, chili, turmeric, and cumin, add the coconut oil and toss to combine.

Place the baking sheet in the preheated oven and bake for 20 minutes.

Add the roasted veggies to a blender along with the warm vegetable broth, grated ginger, and cooked red lentils. Blend until you have a smooth, creamy soup.

Serve the soup in large bowls garnished with coconut milk and a sprinkle of freshly chopped parsley.
